Old No. 7 is the face of Jack Daniel's, a name rooted in 1866 when young Jasper Newton Daniel's distillery received government registration number 7. Daniel learned his craft in the 1850s from Nathan 'Nearest' Green, a freedman whose distilling knowledge shaped the whiskey — a vital chapter in the brand's history long overlooked. The sour mash is built from 80% corn, 12% malted barley, and 8% rye, mixed with water from Cave Spring Hollow, then filtered through sugar maple charcoal — the Lincoln County Process that defines Tennessee whiskey. This treatment yields a smooth, approachable spirit at 40% ABV. On the nose, vanilla and caramel lead, with a subtle toasted oak undertone. The palate is oily and sweet, banana and honey from the corn mash meeting dry oak tannins from the charcoal filtration. The finish is warm and relatively short, lingering with corn and caramel. This is unpretentious whiskey — engineered for cocktails and daily drinking, not contemplation. Neat, you taste the foundations of an icon.
