Redbreast takes its name from the robin redbreast, a bird chosen—likely by a Gilbey's chairman—to represent the Dublin spirits merchant's brand in the 19th century. Gilbey's sourced its new make spirit from the renowned Jameson distillery on Bow Street, matured it, and bottled it under its own label. Today, Redbreast is produced at Midleton Distillery in County Cork.
This 12-year-old expression is classically triple-distilled from malted and unmalted barley in copper pot stills, the hallmark of Irish pot still whiskey. It matured for 12 years in a blend of American bourbon barrels and Spanish sherry casks, creating a distinctive balance of fruit, spice, and wood.
On the nose, complex aromas emerge: fresh fruit, vanilla, and honey, layered with dried spices and sherry influence. The palate is full and silky, revealing dried fruit, caramel, and black pepper, with subtle briny undertones. The finish is dry and lingering, marked by tobacco and medicinal notes that anchor the whole experience.
An accessible yet layered whisky that lives up to its standing as the world's best-selling single pot still Irish whiskey.
