Divergence distils its whisky in Christchurch using Canterbury grains and artesian water. The Otago Pinot Barrel spent 3.5 years in ex-Pinot Noir barrels sourced from Maude Wines in Wanaka—a deliberate choice that brings New Zealand's wine heritage directly into the spirit.
The barrels were prepared and charred in-house by the distillery team, giving them direct control over the maturation environment. This is not a generic red-wine finish, but a specific partnership with a local winemaker.
The whisky presents an orange-amber hue with good legs. The nose reveals dried fruit, vanilla, and caramel, with almond and blackcurrant notes. The palate brings citrus, toffee, and honey, punctuated by pepper. The finish turns dry and spiced, with blackcurrant returning. A whisky that treats the Pinot Noir influence not as a marketing angle, but as an integral part of its identity.
