Virgin Oak
Divergence emerged in late 2015 when four whisky enthusiasts founded The Spirits Workshop in Christchurch. This Virgin Oak is 100% New Zealand single malt: mashed, fermented, and double pot still distilled on-site, then matured for three and a half years in virgin European oak barrels of 50 and 100 litres. The result is a whisky distinguished by its local provenance and unconventional cask choice.
The combination of double distillation and virgin oak yields a fresh, aromatic character. The glass reveals an orange-amber hue with good legs. On the nose, sweet and fruity notes emerge—nashi pear and honey prominent. The palate delivers caramel and cherry, supported by vanilla and the tannins of young oak. The finish is citrus-driven and warming.
