This Clynelish was released by Adelphi as part of their 30th-anniversary selections, matured entirely in a first-fill bourbon barrel. At 58.3% ABV, the 2011 distillation delivers a rare clarity and mineral purity — a modern reading of the distillery, stripped of the soft sweetness that often marks younger Clynelish expressions. The nose opens with semolina pudding and apple compote, then reveals crushed slate, hints of chaff and porridge, and finally almonds with a whisper of lemon peel. On the palate, a pronounced salty bite emerges — a coastal signature not always present in Clynelish — alongside light aniseed notes, sharp green apple, and sultana. The finish runs medium length: barley sugar, stewed apples and pear drops, finishing with a persistent waxiness that is the distillery's hallmark.
