Stauning was founded in 2005 by nine friends with no distilling background, determined to pioneer Nordic whisky-making. The distillery occupies a remote village on Denmark's west coast and works exclusively with locally floor-malted rye and barley. This Rye is the direct expression of that philosophy: traditional, uncompromising, entirely Danish.
Matured for 3 to 4 years in new American oak, the whisky is distilled in small copper stills over open fire—temperatures reaching 650°C create layered, complex flavours. The spirit reads like liquid fresh rye bread: grain and earth in one glass.
The nose brings rye spice, vanilla, and apple skin. The palate maintains that grain-forward character with a pleasant, unpolished mouthfeel. The finish carries cinnamon and white pepper, with a youthful edge that feels intentional rather than a shortcoming—a mark of Stauning's unvarnished craft.
