Oloroso Select Cask

Paul John proved in 2012 that world-class single malt whisky isn't a Scottish monopoly. Sanjay Paul, founder of Alcobev Limited, challenged the assumption that India couldn't produce a premium distillate — and succeeded. The Oloroso Select Cask is the product of Goa's intense climate, where evaporation is extreme; this whisky matured in a single oloroso sherry cask, every drop shaped by that singular wood.

Maturation in oloroso sherry casks delivers a warm, layered spirit. Dried stone fruits, prunes and apricots anchor the profile, with acacia honey and dark chocolate in support. Sherry wood contributes peppery oak spice and a whisper of tobacco leaf.

On the palate, sweetness emerges without dominance — measured, complex. Red fruits, black pepper and ginger create movement across the tongue. The finish is long and intense, with coffee and cocoa slowly surfacing from the oloroso influence. This is a thoughtful whisky that reveals itself in layers, best appreciated without rush.
