Billy Walker, the legendary master distiller behind this expression, built his reputation by reimagining classic Speyside character. The GlenAllachie 15 Years, originally launched in 2019, exemplifies his philosophy: a sherry-forward single malt that has evolved into a richly rewarding dram.
Matured in Scottish virgin oak and Oloroso casks, this whisky draws depth from both wood sources. The virgin oak provides structure and complexity, while the Oloroso imparts dark, layered flavours — dried stone fruit, dark chocolate, spice — without overwhelming the spirit's natural character.
The nose reveals dusty sherry, raisins, plums and blackcurrants, with leather and tobacco leaf emerging beneath. On the palate, a syrupy texture carries notes of dark chocolate, walnut and fig, balanced by citrus brightness and warming spice. The finish lingers with caramel, toffee and dried spice, the Oloroso influence evident but never dominating — instead, it anchors a whisky that feels both indulgent and composed.
