Grianstad an Gheimhridh translates as 'the stopping of the sun'—a name rooted in the ancient Celtic winter solstice celebration. This is the fifth release in Dingle's Celtic Wheel of the Year series, an annual cycle honouring the four seasons and their significance in the Celtic calendar. Dingle Distillery itself was founded in 2012 by three Irish brewers: Oliver Hughes, Liam LaHart, and Peter Mosley.
Triple distilled and matured in ex-bourbon casks before a finish in Tawny Port wood, this single malt balances warmth with orchard fruit. Bottled at 50.5% ABV, it captures the transition between seasons in a single expression.
The nose opens with cinnamon toast and warm ginger, layered with blackcurrant jelly and pomegranate. On the palate, red berries and spice return, accompanied by chocolate and roasted almond notes—the Port finish lending depth and sweetness. A whisky that embodies the solstice moment itself: the turning point between darkness and light.
