The Whistler honours Pat Cooney, founder of Boann Distillery in Drogheda, a keen whistler whose presence is still felt around the distillery floor. This Calvados Cask Finish begins life as a blend of 35% single malt and 65% grain whiskey, aged four years in ex-bourbon casks before finishing in Normandy's finest Calvados barrels—an unlikely but inspired pairing that puts orchard fruit front and centre.
Triple distillation keeps the base light and approachable, allowing the calvados finish to shine. The result feels like a bridge between Ireland and France: apple and pear from the cider cask speak loudly, supported by the soft grain structure and subtle oak tannins from the bourbon maturation. The nose greets you with fresh apple, citrus peel, and toffee undertones. The palate is creamy, delivering apple pie, cinnamon, and crème brûlée notes with a satisfying weight. The finish is medium-length and warm—no harshness, just a gentle fade.
