Gouden Carolus Single Malt emerged from a bold venture by Charles Leclef, fifth-generation owner of Mechelen's Het Anker brewery. In 1991, he launched Stokerij De Molenberg with an unconventional premise: distilling whisky from the wort of Gouden Carolus Tripel, the brewery's flagship beer. This cross-pollination of beer and whisky craft makes this Belgian single malt singular.
The whisky matures first in First Fill Bourbon casks, followed by a secondary phase in 'Anker' casks—custom oak vessels built to De Molenberg's specifications. This dual maturation constructs layered flavour without overwhelming the delicate character inherited from the beer malt.
On the palate, a full-bodied, balanced whisky reveals subtle fruit aromatics, complemented by wood and vanilla undertones. At 46% ABV, it carries enough grip without distraction. This is whisky for those who understand that tradition and experiment need not be at odds.
