Yellow Rose – Outlaw Bourbon lives up to its name by breaking bourbon convention: it's made from 100% Texas yellow corn rather than the grain blend most bourbons rely on. Founded in 2010 by Ryan Baird, Troy Smith, and Ryan Whitaker, Yellow Rose Distilling was Houston's first legal whiskey distillery. The brand takes its name from the 19th-century American folk song 'The Yellow Rose of Texas'.
Texas summers are punishing. Extreme temperature swings in the Houston climate drive an aggressive 15% angel's share, fundamentally shaping the whiskey's character. The distillery deliberately uses smaller American oak barrels to accelerate maturation.
The nose delivers sweet corn, vanilla, and caramel—exactly what a 100% corn bourbon should offer. On the palate, creamy mouthfeel carries toffee and caramel forward, though mineral and astringent notes emerge mid-sip. Straightforward and approachable, this is a whiskey unafraid of its own unconventional grain bill.
