Waterford's Single Farm Origin programme follows a singular principle: one farm, one harvest, one distillation. The Ballymorgan 1.2 comes from Overture barley grown on Robert Milne's farm in County Wexford, one of Ireland's premier malting terroirs. This second Ballymorgan release, distilled in 2016 and bottled in 2020, matured across first-fill bourbon casks (34%), American new oak (20%), French oak, and Vin Doux Naturel barrels.
The blend of youth and rich wood influence creates an intriguing tension. Despite its four years in cask, it avoids the rough edges you'd expect from a young spirit. Vanilla and toffee lead, followed by bakery notes and fruity threads—raisin, a touch of citrus. The finish turns sweet and sticky, with a mouthfeel that suggests the mixed cask regime has integrated well.
This is whisky for those who want to taste the farm story and aren't put off by spirit that still has edges.
