HØST means 'harvest' — and the name tells the story. In 2005, nine friends in Denmark began making whisky, and this double malt is their tribute to Danish terroir and the season of gathering. Barley and rye, both sourced from farms near the distillery, were traditionally floor-malted and then double-distilled. The spirit matured in heavily charred American oak casks and Port barriques, developing into a whisky with a rich copper hue.
The character of HØST flows from its two grains. Rye brings a spicy, herbal backbone, while barley contributes sweetness and floral notes. On the nose, vanilla and beeswax emerge alongside citrus. The palate unfolds with dried red fruit, heather honey, toffee, and a gentle pepper that builds as you hold it longer, finishing with subtle oak and syrup.
This is a whisky that resists easy categorization. Not smoky, not heavy — instead refined and broad in appeal. A Danish summer in a glass.
