Dingle Distillery was founded in 2012 by Oliver Hughes, Liam LaHart and Peter Mosley—three pioneers of the Irish craft beer movement who brought their expertise to whiskey. In 2017, Dingle made history as the first independent Irish distillery to release a Single Pot Still in decades. This Batch 5 was matured exclusively in bourbon casks, a deliberate choice that brings forward the fruitiness and cereal character inherent to pot still spirit.
Crafted from locally sourced malted and unmalted barley, mashed in a wooden tun, this whisky displays the spice and complexity Single Pot Still is known for. The nose reveals honey, vanilla and dried fruit with subtle oak and spice notes. The palate offers a smooth, full-bodied experience with hints of dried raspberries, butter mints and white chocolate—a chewy texture that lingers with citrus and a dusty fade.
