Founded in 2008 by Sonat and Robert Birnecker in Chicago, Koval takes its name from their great-grandfather—an Austrian immigrant who ventured to America at the turn of the twentieth century. This Single Barrel expression is crafted entirely from rye, delivering a pronounced grain-forward character. After maturation in new American oak, the whisky is finished in amburana wood, a Brazilian hardwood known for imparting vanilla, cardamom, coconut, and cinnamon. Koval's commitment to organic ingredients and single-barrel bottling ensures each expression is distinct and fully traceable.
The nose opens with warm vanilla and cardamom, complemented by toasted coconut and cinnamon bark. The palate presents bold rye spice meeting waves of allspice, with a smooth, full texture that belies its strength. The finish proves longer and more elegant than expected, carrying hints of maple syrup and a creamy mouthfeel.
