Abbey The Cask Of II Bourbon Cask

5.0 out of 5 (1 review)

Lindores Abbey is the birthplace of Scotch whisky. In 1494, a monk named Brother John Cor recorded the earliest written reference to whisky-making in Scotland—a commission from King James IV. After 523 years of silence, the distillery resumed spirit production in 2017 under the stewardship of Drew and Helen McKenzie Smith, restoring this landmark in Fife to its original purpose.

This bourbon cask expression demonstrates how the distillery marries modern technique with that heritage. Matured in ex-bourbon casks—likely Old Forester or Woodford Reserve, both known for their rich, spicy character—the whisky at 49.4% ABV delivers a full body and approachable dram without harshness or heat.

The nose reveals deep golden fruit with eucalyptus and spiced cake notes, before banana takes centre stage. On the palate, oak influence plays pleasantly against green apple and banana, followed by freshly ground coffee beans, white pepper, and more fruit. The finish holds that fruit-and-pepper combination with lingering appeal.
