Aberlour was founded in 1879 by James Fleming, a grain merchant with no whisky-making pedigree, yet one whose motto—'Let the Deed Show'—captures the distillery's ethos. That philosophy is embodied in the Double Cask Matured, a whisky that follows two distinct maturation paths before being united. Double cask maturation is the core of this expression. One portion of spirit matures in traditional American oak casks, developing subtle aromatic layers; the other ripens in ex-Oloroso sherry butts, which impart rich, deep character. After a minimum of 16 years, both streams are married together, yielding a deep gold, amber-hued whisky with nuanced interplay between the two cask influences. On the nose, floral and dried-fruit notes emerge—raisins and plums—with a spicy undertone. The palate is both firm and caressing: floral, with oak structure and sherried depth, punctuated by ripe stone fruits. The finish lingers warm and long, with persistent spice and fruit that gradually fade.
