A.D. Rattray is an independent bottler tracing its origins to 1868, when Andrew Dewar Rattray opened a grocer's shop in Glasgow specializing in wines, spirits, and teas. Tim Morrison, the founder's great-great-grandson and a former Bowmore executive, revived the company in 2002. This Cask Orkney exemplifies Rattray's philosophy: a mystery single malt from the Orkney region, matured in bourbon casks and bottled at 46% without chill filtration.
The nose leads with honey and wild violets, followed by ripe peach and heather. On the palate, roasted plums and old-fashioned honeycomb candy emerge, with hop and caraway adding a savoury edge. The finish turns peppery and smoky, with bright citrus and crushed pine needles lingering.
