Divergence is a craft distillery in Christchurch producing whisky from New Zealand grains and artesian water. The Otago Pinot Barrel is matured in ex-Pinot Noir casks from Maude Wines in Wanaka—a choice that shapes this young single malt's character. After 3.5 years in red wine wood, the whisky develops a fruit-forward profile that transcends what you might expect from a New Zealand newcomer. The nose reveals layered aromas: ripe cherry, fig, blackberry, chocolate, and vanilla, with subtle oak in the background.
