The Sexton is the creation of Alex Thomas, one of Ireland's few female master blenders, who honed her craft over years at the historic Bushmills distillery. The name draws from sacristanus — the custodian of sacred objects — a fitting title for someone stewarding the essence of Irish whisky.
Maturation takes place in first, second and third fill Oloroso sherry casks, with European oak air-dried for 16 months, toasted to a medium-high level, then seasoned with Oloroso for two years. This approach balances sweet sherry character with toasted oak structure.
On the nose, a clean, layered profile emerges: dried fruit, caramel and almond form the core, supported by cinnamon, nutmeg and a subtle hint of freshly toasted bread. The palate maintains that equilibrium — fresh fruit and caramel are joined by oak structure and red apple notes. The finish turns dry and peppery, with oak gradually fading.
