Triple Distilled Bourbon Cask Matured

West Cork Distillers was founded in 2003 by three childhood friends—John O'Connell and cousins Ger and Denis McCarthy—in County Cork. The venture began modestly, with distilling in a back room until the move to a dedicated facility in 2014. This Triple Distilled is their flagship: a blend of 75% grain and 25% malt whisky, each distilled three times in the Irish tradition.

Matured in first-fill bourbon casks, the whisky develops characteristic vanilla and caramel notes. Non-chill-filtered and bottled at 40% ABV, it retains full aroma and texture.

On the nose, it presents fresh, light aromas of vanilla, honey, and caramel with subtle grainy undertones. The palate is smooth and balanced, delivering butterscotch, baking spices, and hints of citrus, finishing with a gentle vanilla fade. This is an approachable, everyday dram—unpretentious and easy-drinking rather than demanding complexity.
