The brand itself takes its name from founder Dr. George G. Moore's personal philosophy: "Have the courage of your convictions." The nose reveals fresh fig and honey with layered notes of almond pastry and delicate spice. On the palate, dried cherry and plum emerge, complemented by subtle sweetness and a foundation of oak.
