Redbreast Lustau Edition emerged from a collaboration between the Irish whiskey producer and Spanish sherry bodega Lustau—both names appear on the label. This single pot still whiskey spent 9–12 years maturing in a blend of ex-bourbon and ex-oloroso sherry casks, then finished for one year in hand-selected oloroso sherry butts. That final maturation step defines its character. The composition is distinctive: 60% ex-bourbon (refill) and 40% ex-oloroso sherry (refill), with a mash bill of 50% malted and 50% unmalted barley. This combination produces a full, oily texture that stands apart from most Irish whiskey. On the nose, gentle caramel-glazed apple, sultanas, powdered sugar, and a whisper of cinnamon. The palate is rich and buttery, with apricots, raw almonds, and hazelnuts. The finish stretches long and sweet, caramel notes carried through by liquorice and the oloroso influence—a dessert-like dram that feels both smooth and substantial.
