AGOT is the vision of master distiller Juan Carlos Ortíz de Zárate, who established a microdistillery in the Basque Country in 2014, building on his grandfather's legacy. The Pioneer Edition, the flagship release, matured for three years in used Bourbon barrels and Rioja Alavesa oak — a pairing that marries Basque winemaking tradition with American whisky craft. Following double distillation in a copper still, the result is grain-forward and direct: lemony citrus notes, creamy texture, and a thick palate. Toffee, vanilla, and cocoa provide sweetness, while the red wine casks contribute subtle spice and a light vinous undertone. The finish is short but pleasant — an approachable dram that makes no claims to depth or complexity, but delivers honest, clean drinking. Non-chill-filtered and bottled at natural colour.
