Millstone Pedro Ximénez represents Patrick van Zuidam's lifelong ambition to craft whisky. Founded by his father Fred in 1975, the Zuidam distillery has grown into a serious whisky producer. This 9-year-old single malt is fully matured in Pedro Ximénez sherry casks — named after a Spanish grape variety from Montilla-Moriles, not a person as commonly assumed. The marriage of Dutch whisky tradition, Pedro Ximénez maturation, and peated malt creates a distinctive character. The intense sweetness of PX casks — with their dark, luscious signature — is anchored by earthy smoke from the peated grain. On the nose: fresh damson plums, dried raisins and currants, with hints of sea salt and roasted coffee. The palate delivers dark chocolate, burnt honey, and salted caramel, punctuated by peppery, smoky edges. The finish is warm and lingering, with sherry tannins and a subtle tar note that signals the peat beneath the sweetness.
