4 Years Banyuls Finish 2nd Release

Bourbon BarrelFinish: Sauternes Cask

About

The Chamberick is a micro-distillery in Kamerik, Utrecht, founded by Laetitia de Hoog. Only a handful of casks leave the distillery each year—this second release arrived 18 months after the first. Both are finished in ex-Banyuls, a French wine from Roussillon with appellation d'origine contrôlée status. This 4-year-old single malt follows the Scottish template: 100% malted barley, double-distilled, matured in first-fill bourbon, then finished in Banyuls. Bottled at 51.2% ABV, it is slightly older and stronger than its predecessor. The nose opens with muscovado sugar, honey and subtle spice. Sandalwood, pine needles and stewed apple give way to coconut shavings and amaretto. The palate brings soft white pepper, mint and angelica root—herbaceous, with walnuts and coffee notes. The finish settles into jammy plums, mead and tinned peaches. Noticeably more polished than the first release, with a balance of spice, sweetness and fruit.
