GlenAllachie was founded in 1967 at the foot of Ben Rinnes and spent decades producing blended whisky before establishing itself as a single malt house under private ownership. This 35-year-old from 1990 represents a pinnacle of that evolution: a rare marriage of four cask types, with Japanese Mizunara oak at its core. Virgin Mizunara paired with virgin American oak and two styles of Spanish sherry—Oloroso and Pedro Ximénez—creates uncommon layering. Bottled at cask strength (50.2% ABV), the whisky unfolds with mocha, crystallised cinnamon, and treacle tart on the nose, followed by cocoa, toasted hazelnuts, and pineapple. The palate delivers cocoa, baking spices, and chocolate-coated raisins, complemented by coconut, brandied orchard fruits, and vanilla. The finish turns tannic and saline, with umami, lovage, and dried stone fruit—particularly apricot and quince—finishing with a sharp tobacco edge. This is a whisky for those who respect time and aren't deterred by structure. Three decades of maturation and four distinct wood influences converge into a spirit that rewards patience and contemplation.
