Single Malt

Walsh Whiskey was established in 1999 by Bernard and Rosemary Walsh as a family-driven effort to revive Irish whiskey. The Irishman Single Malt embodies their commitment to quality — a triple-distilled whiskey made from 100% malted barley, following the classical Irish malt tradition that prioritizes refinement and softness.

Matured in ex-bourbon casks and finished in ex-Oloroso sherry casks, this expression gains depth and complexity without overwhelming the delicate character of triple distillation. The interplay between wood types creates a whiskey that feels both grounded and elegant.

On the nose, honey and malted barley lead, with vanilla, citrus, and licorice notes in support. The palate reveals orchard fruits, toasted nuts, and herbaceous notes, building toward a warming finish where spice and dark chocolate take hold. This is Irish single malt stripped of pretense — approachable, well-made, and true to its origins.
