Redbreast is single pot still whisky's flagship expression—a style found almost nowhere else in the world. The name traces to the nineteenth century, when W&A Gilbey first released it under this label; it has since become the world's leading pot still Irish whiskey brand. Made at Midleton Distillery in County Cork using a mash bill of malted and unmalted barley from Munster farms, Redbreast follows the traditional recipe that defines the style's characteristic spice and silky texture.
The 12-year-old expression matures in a combination of ex-bourbon and Oloroso sherry casks, striking a balance between vanilla and fruit without overwhelming sherry dominance. This is an accessible whisky that refuses to sacrifice depth—built for drinking, not just collecting.
On the nose, spice (black pepper, ginger) mingles with red fruits (strawberry, raspberry) and subtle leather. The palate is velvety and nourishing: compote fruits, salted butter caramel, and toasted wood emerge without any single note overpowering the rest. The finish remains dry and peppery, with a lingering warmth that invites another sip.
