InQuota is the mountain whisky project of the Dolzan family, owners of Villa de Varda in Trentino Alto Adige. The Dolomiti Spruce Cask Finish is matured and finished in casks made from local Dolomitic spruce — an unconventional choice that imparts a distinctive balsamic, woodland character to the spirit.

The barley grows at altitude in the Alps, creating a different growing season and mineral profile than lowland distilleries. After primary maturation, the whisky is finished in these Dolomitic spruce wood casks, yielding a medium-long, mentholated finish with notes of coffee, aniseed, and nuts.
