Pot Still
Glendalough sits in the Wicklow Mountains south of Dublin, in a valley whose name in Irish—Gleann Dá Loch—translates to 'valley of two lakes.' The distillery, founded in 2011 by five industry veterans, draws inspiration from Saint Kevin, the legendary hermit whose story adorns every bottle. This Pot Still is a classic Irish blend: grain whiskey (50%), pot still whiskey (30%), and single malt (20%), each matured separately in bourbon, oloroso, and PX casks before marriage. The result is approachable and designed for whisky drinkers taking their first steps into Irish spirits.
The nose offers vanilla, green and red apples, toffee, and raisins, layered with chocolate, toasted oak, and hazelnut. Cereal-forward, but balanced. The palate brings nuts, honey, and cream, with white pepper threading through. The finish is medium-length, with toasted oak, cinnamon, and vanilla fading gently.
This whiskey doesn't overstay its welcome. It's neither heavy nor demanding—qualities that make it ideal for newcomers to Irish whiskey. Experienced drinkers may find the body slightly lean, but that's a matter of expectation rather than execution.
