Waterford's Single Farm Origin programme brings terroir to Irish whisky. Hook Head 1.1 takes its name from the lighthouse standing resolute against the Atlantic on Ireland's southern coast, 10 miles from the distillery, and uses barley grown on farmer Martin Foley's land near Hook Head. This first release from 2017 was bottled in February 2021 after three years maturing in a blend of first fill bourbon, virgin oak, and other casks — a deliberate choice to express the character of the local soil and maritime setting.
The nose opens sweet and malty, then quickly turns intense, green, and grainy. Water reveals light grassy and menthol touches. On the palate, spice dominates: white pepper, clove, ginger biscuits, and salted caramel jostle for attention, alongside liquorice, lemon zest, and a hint of chilli chocolate. The mouthfeel is oily and silky, with underlying honey and nuttiness.
The finish remains dry but intensely peppery, the spice lingering long. This is not a subtle dram — it is raw, assertive, and rooted to place.
