Wolfburn
Wolfburn was founded in 1821 by William Smith on the outskirts of Thurso, named after the Wolf Burn watercourse that supplies the distillery. Its logo draws inspiration from a 16th-century drawing, believed to depict a sea wolf. Wolfburn stands as Scotland's most northerly distillery on the mainland, deeply rooted in the rugged character of the far north coast.
This expression matured in first-fill Oloroso sherry casks and ex-bourbon barrels, a pairing that delivers richness and complexity. The elevated ABV of 68% carries the full weight of the cask influence without dilution.
On the nose, expect honey, dried stone fruit, and gentle spice from the Spanish oak alongside a subtle smoke. The palate is rich and syrupy, with notes of vanilla, toffee, and candied malt, finishing with a lingering sweetness and warmth that speaks to its northern provenance.
