Hinch is a young Irish distillery founded by Dr. Terry Cross OBE in County Down in 2019. The name derives from Ballynahinch—'Town of the Island' in Irish. This Double Wood blends single malt and single grain, initially matured in ex-bourbon casks, then finished for a year in virgin American oak—a technique the distillery uses to build complexity and depth quickly.
The pairing of ex-bourbon and virgin oak creates distinctive character. Bourbon casks contribute softness and toffee; fresh oak adds citrus, green apple, and sharp spice.
The nose delivers intense citrus fruit, green apple, and lemon curd, with hints of barley and green tea. The palate shows bold spice and mocha notes, balanced with fruit and sweet undertones of treacle and honeycomb. The finish leaves citrus and pepper, with a gentle warmth.
