Bellevoye was founded in 2013 by Alexandre Sirech and Jean Moueix, two industry veterans who envisioned a French whisky capable of standing alongside Scotch classics. The name derives from the French phrase for 'beautiful view'—a fitting metaphor for their ambition. Bleu is a blend of three French single malts, sourced from distilleries in Lille, Alsace, and near Cognac, each selected through blind tastings.
The whisky undergoes a two-stage maturation: first 3 to 7 years in French oak casks, then 9 to 12 months in larger vessels with gentle warming, allowing the spirit to extract deeper wood influence. This sequential approach sets Bellevoye apart from conventional blending practices.
On the nose, Bleu reveals cereals, sweet spices, honey, and white flowers. The palate is round and balanced, with yellow fruit, cooked apple, and woody notes, accented by cinnamon and pepper. The finish brings honey and vanilla, with a whisper of smoke. This is a whisky that rewards attention—not as a showpiece, but as a thoughtful conversation.
