F.Reserve Caribbean Cask

The Irishman Founder's Reserve Caribbean Cask is a limited release from just 12 casks, finished for six months in rum barrels sourced from the island of Saint Lucia. This is not a straightforward single malt but a blend of single malt and single pot still whiskeys—the distinctive Irish combination that defines The Irishman's character. Walsh Whiskey built this expression on the legacy of The Irishman 70, a recipe with decades of heritage.

After its Caribbean rum cask finish, this whiskey gains tropical dimensions while the Irishman foundation—that characteristic blend of malted barley and pot still spirit—remains the core. The rum casks add layers: sweet banana and fig notes, spice, and a subtle rum influence that never overwhelms. Bottled non chill-filtered for full flavour.

On the nose, silky and fruity—tropical fruit, apricot, summer stone fruits. The palate brings malt and caramel sweetness, honeyed and oily, with a prickly spice developing. The finish is long, with oak, spice, and a gentle dryness. A whiskey with genuine story and craft, not a gimmick.
