Milk & Honey was born in 2013 from the vision of a group of Tel Aviv tech entrepreneurs determined to turn their whisky passion into reality. The distillery takes its name from the biblical epithet for Israel—the "land of milk and honey"—and operates from a converted bakery in south Tel Aviv.
This Young Single Malt is just one year old and technically cannot yet be called whisky. The intense Israeli climate, however, accelerates maturation dramatically; the spirit develops remarkable depth for its age. The blend draws from ex-bourbon casks (75%), ex-Islay casks (10%), and STR ex-red wine casks (15%), creating an unusual three-way influence.
The nose is fresh and fruity, anchored by honey and malt. The palate brings vanilla and toasted coconut from the bourbon maturation, rounded out by juicy grapes and white chocolate notes. The finish is brief but pleasantly sweet—no harshness, despite the spirit's youth.
