Cider Cask Finish
Tullamore Dew takes its name from Daniel Edmund Williams, who became general manager and later owner of the Tullamore distillery in 19th-century Ireland. The Cider Cask Finish applies this heritage with a playful twist: a blend of pot still, malt, and grain whiskies that mature first in ex-bourbon and ex-sherry casks, then finish for three months in ex-cider casks.
Those cider casks are first filled with fresh-pressed Irish apple juice fermented into cider before the whisky is introduced. The result is a fruit-forward sweetness without the cloying sugar of many finished whiskeys.
Nose and palate are led by fresh apple—green apple, applesauce, sometimes apple candy—supported by soft malt sweetness and gentle wood influence. The blend feels light and smooth, without the sharp edges you might expect from cider finishing. It remains a classic Irish blend, only now with a fruit-forward character that unmistakably comes from that cider maturation.
