Balcones started in 2009 in an old welding shop under a bridge in Waco, Texas—the first distillery to make whisky in the state since Prohibition. Eclipse is their cask strength rye, distilled in copper pot stills from 100% rye and aged at least four years in charred bourbon barrels. There are no shortcuts: bottled at 64% ABV, non-chill-filtered.
The nose shows a toasty, grainy character with hints of damp oak and a dry minerality. On the palate the whisky opens up more than the proof might suggest; the rye spice is tempered by vanilla and honey, while white pepper and dried spices (cumin, fennel seed) cut through with intensity. Oak sits in the background, providing structure without dominating.
The finish is dry and peppery, with a lingering spice that doesn't fade quickly. This is a whisky for those who appreciate the raw power of young, unfiltered rye—honest and earthy, not polished or soft.
