Whisky-Rosemary Balsamic Reduction

Instructions

    Heat the olive oil in a pan over medium heat.

    Add the shallots and garlic, and cook until soft, about 3 minutes.

    Add the bourbon whisky and let it simmer for 2 minutes to evaporate the alcohol.

    Add the balsamic vinegar, brown sugar, rosemary, and thyme. Stir well.

    Reduce the mixture on low heat until halved, about 10 minutes.

    Season with salt and pepper, and strain the sauce to remove herb and shallot bits.
