Whisky Infused Chicken Supreme

A refined chicken dish where the subtle notes of a rich single malt Scotch whisky enhance the flavor of the chicken. The whisky is used in a creamy sauce with mushrooms and herbs.

Instructions

    Preheat the oven to 180 degrees Celsius.

    Season the chicken breasts with salt and pepper.

    Heat the olive oil in a large ovenproof pan over medium heat and sear the chicken breasts until golden brown on both sides.

    Remove the chicken from the pan and set aside. Add the butter to the pan and melt.

    Sauté the shallots and garlic until soft. Add the mushrooms and cook until golden.

    Deglaze the pan with the whisky and let the alcohol evaporate.

    Add the chicken stock and heavy cream. Stir well and season with thyme, salt, and pepper.

    Return the chicken breasts to the pan and spoon some of the sauce over the chicken.

    Place the pan in the oven and bake for 15 minutes, until the chicken is cooked through.

    Serve the chicken with the sauce and garnish with fresh parsley.
