Mix the Irish whiskey, soy sauce, honey, pineapple juice, lime juice, garlic, ginger, and chili flakes in a bowl.

Add the chicken cubes to the bowl with the marinade and refrigerate for 2 hours.

Thread the marinated chicken, pineapple, and bell pepper pieces alternately onto skewers.

Preheat the barbecue or grill pan to medium-high heat.

Grill the skewers for 10-15 minutes, turning regularly and basting with the remaining marinade, until the chicken is cooked through.
