Holyrood Distillery made history in 2019 by opening as the first single malt whisky distillery in Edinburgh in nearly 100 years β the Scottish capital had not seen a new single malt operation since 1925. The distillery was founded by Canadian couple Rob and Kelly Carpenter, together with Scottish whisky expert David Robertson, following a capital-raising effort that began in 2017. Located in the heart of Edinburgh, the distillery breathes new life into a building with a storied past: its warehouse once served as a naval rum store, a heritage that continues to influence the way Holyrood matures its spirit today. Holyrood's approach to whisky-making is experimental and craft-focused, with an emphasis on variety and texture. The distillery stocks its sherry and bourbon octave casks in the historic former rum warehouse, lending its whisky's a rich and layered character. Holyrood produces single malt Scotch whisky firmly within the Lowland style, though its founders bring an international perspective that sets it apart from more traditional Scottish distilleries. The brand has attracted attention from whisky buying platforms such as Caskshare and international distributors including La Maison du Whisky, reflecting a growing global reputation. As one of the newest distilleries operating in Edinburgh, Holyrood represents a bold chapter in the city's whisky history. Its textured label design and distinctive identity have drawn recognition in the design world as well, positioning Holyrood as both a quality producer and a contemporary craft brand to watch.
